Recipe: Jalapeno Cheddar Corn Muffins

There has been a jar of jalapenos sitting in our fridge for several years months now.  I've been waiting for the perfect opportunity to use them up, but nothing ever fit the bill.  Yesterday I was going to make some corn muffins, and the light bulb went off--add some jalapenos and cheese! Of course! How could I have sat on that for so long? It certainly gave them some kick and added variety. I took them to a potluck and made sure to label my platter "jalapeno" since not everyone prefers hot food.


Of course I just used boxed Jiffy out of convenience, but I'm sure homemade cornbread would be much better. And I didn't use an actual recipe. Just winged it and hoped it worked out for the best.  It did!

So I just made the corn muffins according to the package directions.


Then added about 1/4 cup chopped jalapenos and 1/4 cup cheddar cheese.



Bake them like normal and you have a super easy variation to an otherwise boring recipe!



Mmmmmmmmmmmmmm.


***Safety tip: Do not rub your eye while chopping up jalapenos like dummy. It burns. Not that I would know or anything.

These look sooo yummy and I just love the addition of jalapeno and cheddar.. we make homemade corn bread all the time.. so I will have to try adding your fun ingredients!
