I have always loved bleu cheese: as a dressing served with wings, in the crumbled form on salads, melted on top of burgers, you name it. I absolutely love its sharp, tangy, distinct flavor. I have been craving it like crazy lately, so I made this dip the other night for a group of friends and it was SO good! Definitely hit the spot.
Baked Bleu Cheese Dip
Ingredients:
16 ounces cream cheese, softened
1/3 cup cream
1/2 teaspoon garlic pepper
4 ounces bleu cheese, crumbled
2 green onions, dark and light parts, chopped
Directions:
1. Preheat oven to 350 degrees F.
2. Place cream cheese, cream, garlic pepper in the bowl of a food processor or mixer and blend until smooth. Stir in bleu cheese and green onion and pulse a 2 of 3 times to combine.
3. Spread dip into a medium baking dish. Bake for 20 minutes until heated through and golden brown on top.
4. Serve warm.
I served mine with some baked wheat bagel chips I found at the store, but it would be equally delish with crudites, pita chips, or a french baguette. Also you can easily make it the day before, refrigerate it in the baking dish, and just pop it into the oven and bake a little extra the next day.
